Soft pressing and fermentation at a controlled temperature, never exceeding 28. Maceration on the skins for 20 days

MATURATION AND REFINEMENT

Elevation in small 225 litre Allier oak barrels for at least 15 months. In bottle for at least 10/12 months, in our underground cellars.

DESCRIPTION

The color is a very deep ruby red, with an intense aroma with notes of spices and red berries that are very well blended. Full taste, mobido and consistent. It is accompanied by mature cheeses, preferring Tuscan pecorino, roast and braised.
